I just had a discussion about this with one of my brothers about 6 weeks ago.  
He was getting a new laptop and what swayed him was OneNote.  There is no 
direct competitor for OneNote, but there are note taking/organizing 
applications.

Freemind is a basic thought organizer.

BasKet for KDE is closer to OneNote with its ability to paste in URLs, images, 
text and freely organize them onto the page.

And, I think tomboy is good for gnome.  I've heard other people say it was 
better than basKet for some things.

But, alas, there's no direct feature for feature competitor with OneNote.  
Personally, I use basKet and I really like it.  I copy and paste important 
e-mails and flag them as To-Dos to get them out of my inbox.  I save 
important URLS for projects or tasks in there instead of using a browser's 
bookmarks.  I can also paste in screenshots of Web site errors...  For me, it 
works, but I've never used anything else so I don't know what I'm missing 
(oh, i have used freemind and I like it for starting out new projects, but 
basket fits so nicely into kontact that I don't use it much anymore).
