I use ghettoVCB http://communities.vmware.com/docs/DOC-8760

It is installed on each node, on a schedule it makes a snapshot of each
VM and copies the snapshot to an NFS mount.

Simple, easy; no fuss.

Note that I treat backing up of DATA and SNAPSHOTS-OF-VMs as two
*independent* tasks.  ghettoVCB creates an image of the VM [which may
or may not contain data], and elsewhere/otherwise I backup data [on a
more frequent rotation].
