What are the features that you want?  Wikis, by their nature, are web 
oriented and for collaboration.

If you don't want either of these things, use a web page editor together 
with a revision control system (such as git) so that you can see when 
you made changes to each page, roll it back, etc.

Or if you want collaboration on documents, just not via a web server, 
then consider a collaborative editor such as Gobby, Google Docs, 
MoonEdit, or similar:
