I'm quite impressed with Ubuntu as a desktop system, but for servers I'd
probably pick straight Debian, or one of the other distros that others
have been suggesting here.
Not that Ubuntu *can't* be a good server, but that's not really its focus
and for a server you want stability. A bit[1] of flakiness in exchange for
currency/convenience is acceptable in a desktop, but not in a server.

Remember, the Japanese-Americans selected for internment in WWII were
picked based on Census data. The government simply ignored the laws

[1] Note: a 'bit'. I've had much more than a 'bit' of flakiness from
my new Vista box than from my new Ubuntu 7.04 install.
