Encryption/signing is offered by the GUI email clients Sylpheed
and its derivative Claws:

It's all based on the GNU Privacy Guard (gnupg) and lots
of excellent backgound information is found in the gnupg
documentation:

Other Linux email clients may also offer encryption/signing
but I don't know because I exclusively use Sylpheed.
