I'm not at my regular computer so I can't lookup the details but there  
is a minimum version of VirtualBox required for GNOME3 *Shell* [the  
default interface, vs. "Fallback"] to work correctly.

Generally it sounds like you Virtual Box VM is not correctly, or  
effectively, providing video acceleration.  GNOME3 Shell requires  
OpenGL acceleration [which is really *not* the same thing as "3d  
acceleration"; although people tend to conflate the terms].  I have no  
idea why the applications would be slow under KDE as well expect that  
(a) they are still attempting to use the same Cairo/rendering model  
that would be used by Shell [doubtful] or there is actually some  
timeout issue occurring accessing gsettings, d-bus, etc...  If you run  
a GNOME application from the command-line in another DE where it is  
unresponsive do you see it spewing any error messages?
