Look at ffmpeg.  It can convert almost any type of multimedia
format into any other format.  And it supports multiple codecs
for use with formats that use encoding.

Try this first to see if you need to use settings other than
the defaults.

  ffmpeg -i video1.??? soundtrack1.mp3
