Others have mentioned SuSE and knoppix - most any distribution
nowadays has a LiveCD, and generally remastering them is part of
the documentation on their websites. I like the Centos livecd
myself, mostly since i'm an RHEL user.

However, you can probably accomplish your basic needs with just a
standard LiveCD and a modification to your DHCP server. Just tell
the DHCP server to assign the appropriate IP address to the ethernet
address of the PC. ISC dhcp can do this for sure, but i'd be shocked
if any other DHCP server out there didn't have that feature.

Or, even lazier, just let it boot by dhcp and check the dhcp logs
to see what ip address it was assigned.
