Have you looked at Samba? It's not actually a NAS solution, but might work
well depending on your requirements. Configuring Samba to act as a
'workgroup' server is fairly easy to setup and works well with any Windows
client (e.g. you don't need XP Pro or Vista Business). And just about any
Linux distribution you try will have Samba packages available to download.
If you decide to try Samba, I would stay away from the PDC (domain based)
configuration for a home network and just stick with a stand-alone
(workgroup) config.
