For Redhat, I watch:
- The Enterprise Watch List, security announcements about all redhat
products

- Redhat Discussion List, general discussion about Redhat products

- Redhat Sysadmins List, a list for sysadmins of redhat systems

They're all pretty good lists for keeping up or asking questions. The
sysadmin list does tend to get some traffic from clueless admins who
want the list members to do their job for them, but that happens
everywhere.
There are product specific lists too. I read the Redhat 5 announce
list (https://www.redhat.com/mailman/listinfo/rhelv5-announce), and I
believe that there usually are new lists announced for betas and
releases as they come out.
