KVM has proven, thus far, to be far easier to setup and get a VM running
than I initially expected. I have run into a few possible issues, such as
the apparent lack of modifying the number of processors, the amount of RAM,
adding additional mount points that are on the host machine to the VM.

I also noted that KVM has the option of "capturing" hardware from the host
machine, which means that I could install a PCI NIC and have it be wholly
"owned" by the virtual server.

That's interesting, but how would I go about editing/changing the captured
PCI NIC to a different PCI NIC if I wanted to clone a generic install and
use that base to build the Email VM and then another to build the Fileserver
VM?

These are some of the questions that I'm currently having with KVM that I am
starting to work out.
