Without a model number, it's hard to determine for certain. However, I
can make a couple general points.
With Android being open-source, it's possible to sell such tablets
without paying Google any royalties. However, such knock-offs generally
cannot connect to the "Google Play Store" and buy applications; the Play
store disallows such devices. I'm not sure if there's a way around that
- however, for many apps, especially non-commercial ones, it's possible
to download the .apk file and install that. Also, there's the Amazon
Market.
I'd find it very unlikely the RAM chip would be easily swapped. It's
almost certainly soldered to the board, and would take considerable
skill and/or specialized tools to remove/replace. (It would probably
also require some other resistors to be added/removed to signal the RAM
size to the board.)
I'd also think it unlikely that this tablet would have USB host
capability (USB is not a symmetric protocol; one end has to be the
'master' and the other the 'slave') and therefore would not be able to
connect to external USB drives.
As to rooting, you could look at xda-developers.com; my first hit was
